パリのお店で仕事をしていたとき、①困ったのは、お客様に「寿司はできないの?」「デザート(注1)はないの?」と聞かれたことでした。お寿司は、日本料理とは修業(注2)が全然違うのですが、フランス人にとってみれば「日本レストランなのに寿司がないのはどうしてだー?」となるわけです。日本のイタリアレストランにピザがなくてしかられた時代もあったのでしょうが、②それと同じような感じでしょう。もちろんそれだけでなく、デザートのないレストランなんてヨーロッパにはあり得ませんから、寿司もデザートも一生懸命勉強しました。この頃の努力は今とても役立っています。世の中にムダな努力は本当にないですね。 うちのお店では、お椀の次は、「お凌ぎ」といって、小さなお寿司をお出します。 一貫だったり二貫だったりしますが、軽くお寿司を味わっていただきます。これはひと区切り(注3)の合図です。料理の最後は ( A ) で終わるのですが、途中で一回お寿司をお出しして、ここでとりあえずー段落。ちょっとお腹を落ち着かせてもらって、ここからまたお酒を飲みましょうという気分に持っていきます。
