食の文化的側面(注1)を研究しはじめているのは欧米と日本など豊かな国々においてであり、食生活の歴史の研究の書物が自国人によって書かれているのもこれらの国々に集中している。いずれも、経済的に豊かで飢餓(注2)の恐怖をかかえていない国においてのことなのである。食が足ってのち、食の文化について考える余裕ができるのだ。食の文化について考えるのは、一時的にせよ、そのような幸せな状態にある私たちのなすべき義務である、ともいえる。それは自国のためばかりではなく、人類の共有財産として、いつか役立つ方向のものに研究が進むことを要請されている(注3)のである。

It is in wealthy countries such as Western nations and Japan that research into the cultural aspects of food has begun, and books on the history of dietary habits written by native authors are also concentrated in these countries. Both of these phenomena occur in countries that are economically prosperous and do not face the fear of starvation. Only after one's food needs are met does one have the leeway to consider food culture. It can be said that contemplating food culture is a duty that we, who are in such a happy state—even if only temporarily—should fulfill. This research is required to progress in a direction that will eventually be useful not only for one's own country, but also as a shared asset of humanity.
